Baked Avocado with Turkey and Egg
1 avocado, ripened
2 slices turkey (or deli meat of your choice, I use Applegate Farms)
Pinch of salt
Pinch of pepper
Pinch of chili powder (optional)
- Preheat oven to 350 degrees. Meanwhile, slice avocado in half and remove the pit. You may want to scoop out a small amount of additional avocado to be sure your egg fits without overflowing too much.
- Fold the slice of turkey in half and gently place in the hole where the avocado pit once was, gently pressing down to make room for the egg.
- Break one egg at a time into a cup, and slowly pour into the hole on top o the turkey. Repeat with the second egg and avocado half.
- Top with a pinch of salt, pepper, and chili powder. Bake at 350 degrees for 20-25 minutes or until egg is cooked to your preference.
