Basil Parsnip Puree
3 cups parsnips, peeled and sliced (about 5 large parsnips)
1/4 cup unsweetened almond milk
1/2 teaspoon salt
1 teaspoon lemon juice
20 basil leaves
1. After peeling and slicing the parsnips, steam until fork tender. (I use the Pampered Chef microwave steamer for just about everything, it is amazing!)
2. Place all ingredients in the food processor and pulse until smooth. Enjoy!
