Crab, Mango, Avocado Tower
2 limes, zest and juice
1/3 cup mango, diced
1/3 cup avocado, diced
1/3 cup red bell pepper, diced
1/3 cup red onion, diced
1/3 cup chopped crab claw meat
1/4 teaspoon salt
1/4 teaspoon garlic
1/8 teaspoon crushed red pepper
1 tablespoon olive oil
- Zest and juice 2 limes and place in bowl with olive oil, salt and red pepper.
- Soak red onion in lime and oil mixture for about 1 hour and then drain liquid saving 1 tablespoon for the crab.
- Pour 1 tablespoon of the juice into crab meat.
- Using a ring mold on a plate, layer pepper, crab, red onion, mango and avocado or mix in bowl to create salad.
