Back to the BACON! Who doesn't love food mixed with bacon? I know I do, especially vegetables cooked in bacon. Although I love string beans on their own, mixing them with bits of bacon and cooked in bacon grease make them an incredibly delicious and easy side for any meal, any time of year.
1 pound string beans (any color), with ends cut off
4 slices bacon, cut into tiny pieces
1 shallot, sliced
1/4 teaspoon dill weed
1/2 teaspoon salt
Large bowl of ice water
- In large soup pot, boil 3 quarts of water. Once boiled, add green beans and cook for 3-5 minute, depending on desired consistency and crunch. Once beans are done cooking, use a slotted spoon to scoop them into a bowl of ice water. This will stop them from further cooking.
- Meanwhile, in a non-stick pan over medium heat, cook bacon until crispy. Remove bacon and set aside, leaving bacon grease in the pan.
- Lower the heat and sauté shallot over low heat until translucent. Mix back in the bacon, beans, salt and dill and toss for about 3 minutes.
