Maple Glazed Brussels Sprouts
4 slices of uncured, nitrate-free turkey bacon (I love Trader Joe's), diced
3 cups brussels sprouts, quartered or diced
2 tablespoons pure maple syrup
1/4 teaspoon black pepper
1/4 teaspoon chili powder
1/8 teaspoon red pepper flakes
1 tablespoon olive oil, divided
1. Heat 1/2 tablespoon olive oil over medium heat and add turkey bacon. Stir frequently and cook until browned, 7-10 minutes.
2. Remove bacon from the pan and add remaining olive oil and brussels sprouts. If the bottom of the pan becomes dry, add a few tablespoons of water - this will not make the veggies soggy.
3. Add pepper, chili powder and red pepper flakes and stir frequently until brussels sprouts begin to brown, approximately 10 minutes.
4. Once sprouts reach desired doneness, add bacon and maple syrup to pan and cook for 3-4 minutes.
