Modern Cobb Salad
12 medium/large shrimp
2 tablespoons goat cheese
2 slices uncured, nitrate-free turkey bacon
1/2 cup mango, diced
1 avocado, diced
1/2 cup beets, diced
5-6 cups romaine lettuce, chopped
1/2 teaspoon chili powder
1/4 teaspoon cumin
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
1/8 teaspoon salt
2 teaspoons oil
1/2 large shallot
1/2 tablespoon whole grain mustard
2 tablespoons organic lemon juice
2 tablespoons apple cider vinegar
1 tablespoon honey
2 tablespoons olive oil
1. Soak 2 wooden skewers for a few minutes and add 6 shrimp to each. Coat shrimp with seasoning blend (chili powder, cumin, onion powder, garlic powder, black pepper, salt). *If you don't have skewers, you can just grill the shrimp without.
2. In a grill pan (or skillet), heat oil. Once hot, add the shrimp and cook 4 minutes on each side or until cooked through.
3. Place romaine lettuce into 2 bowls and arrange the half of the following ingredients in each: goat cheese, mango, bacon, avocado, beets, shrimp.
4. Pour 2 tablespoons of dressing (you'll have extra) on each salad and enjoy!
