Pumpkin Chia Pudding
1/4 cup chia seeds
1 1/2 cups almond or coconut milk
1/2 cup pumpkin puree
1 tablespoon maple syrup
1/2 teaspoon vanilla
1/4 teaspoon cinnamon
Top with nuts, cacao nibs or shredded coconut (optional)
- In large mason jar (not the size pictured above), combine all chia seeds and milk. Mix well to avoid large clumps of chia seeds.
- Mix in remaining ingredients, stirring until fully combined.
- Place the lid on the jar and shake well.
- Set in the refrigerator for at least 3-4 hours, preferably overnight. I sometimes will mix again after 2 hours.
