Spiced Sweet Potatoes and Spinach
1 large sweet potato, peeled and cubed
1 small onion, diced
3 cups baby spinach
3 tablespoons organic, low-sodium vegetable broth
3/4 tablespoon coconut oil
1/4 teaspoon salt
1/8 teaspoon nutmeg
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
1/4 teaspoon red pepper flakes
1/4 teaspoon cumin
1/4 teaspoon paprika
1. In a pan over medium heat, add coconut oil.
2. When oil is hot, add sweet potatoes and cook for 7-9 minutes over medium heat.
3. Add onion and cook for 6-7 minutes or until translucent.
4. Lower heat and add vegetable broth and spinach. Cover and cook for 5 minutes.
