Watermelon Feta Salad
5 cups watermelon, cubed
2 cups cucumber, cubed
2 cups feta, cubed
4 cups arugula
1 cup cucumber, diced
8 mint leaves
1 tablespoon balsamic vinegar
1 tablespoon apple cider vinegar
1 tablespoon honey
2 tablespoons olive oil
1/4 teaspoon salt
1/8 teaspoon pepper
3/4 teaspoon whole grain mustard
1. Cut watermelon and cucumber into small cubes, approximately 1/2 inch.
2. Cut feta into smaller cubes, approximately 1/4 inch.
3. Mix watermelon, cucumber, feta and arugula in a large pour.
4. Place all dressing ingredients in a food processor until well-blended and serve over the salad. You may have a bit of dressing left over depending on how heavily you like your salad dressed!
